Before the opening of his chocolate factory we did not know leading chef Alain Ducasse cared so much for chocolate. Yet his passion is now abundantly clear. He wished to make the perfect chocolate to be served in his restaurants, and with the expertise of Nicolas Berger, he has accomplished his aim. Every step of the process is in accord with their painstaking personalities and sense of perfectionism. The cocoa beans are stringently selected before being roasted, broken, crushed, refined, tempered and moulded on site by specially designed machines. Daring and creative innovations are harnessed to unflinchingly high standards to produce the very finest end product conceivable. Pure chocolate ganaches, gourmet ganaches, truffles, pralines, bite-size pieces and 44 different flavours of chocolate bar! It’s the craft of yesteryear today, proceeding slowly and carefully in a building reflecting the authenticity of the neighbourhood just as the Hotel Fabric does. JR.
