Maison Plume: Healthy and Indulgent Patisserie in Paris

Categories : Eating, Lifestyle, published on : 2/19/26

The gluten-free, no added sugar patisserie melting the heart of the Marais

Just a few minutes’ walk from Hôtel FABRIC, one address has been quietly winning over discerning food lovers in the Haut-Marais. Behind its understated façade, Maison Plume strikes a rare balance between two seemingly irreconcilable worlds: refined Parisian patisserie… and desserts that are entirely free from added sugar and gluten.

Yes, it’s sugar-free. Yes, it’s gluten-free. And yes, it is utterly delicious !

A personal story turned purposeful venture

Maison Plume begins with its founder, Tara Pidoux. Hypersensitive to gluten since her teenage years and raised in a family attentive to organic produce and naturopathy, she grew up with a simple yet pressing question: how do you continue to love patisserie when your body sets strict limits? Rather than give up, she chose to reinvent.

After studying economics and management, completing a CAP in patisserie at Ferrandi and gaining experience in respected Parisian houses, she opened her coffee shop on rue Charlot in 2019. Her ambition was clear: to make fine patisserie accessible to everyone — from those living with diabetes or gluten intolerance to anyone mindful of their glycaemic intake.

The result is an inclusive, exacting and thoroughly modern patisserie.

Flavour above all

Forget everything you think you know about “healthy desserts”. At Maison Plume, the display counter tells a very different story.

Creations evolve with the seasons, yet certain signatures remain firm favourites:

  • a bright and perfectly balanced keto lemon meringue tart

  • exceptionally creamy vanilla or chocolate flan

  • a delicate vanilla and blackcurrant entremets

  • a subtly toasted vanilla-pecan “fleur”

Each dessert proves that gluten-free, no added sugar patisserie can rival the great Parisian classics, without ever feeling like a compromise.

The secret lies in a carefully selected organic and fairly traded stevia, free from the bitterness often associated with the plant. The glycaemic index remains low, while flavours stay beautifully expressive. Textures are meticulously crafted, ingredients are largely organic, and sourcing is handled with real integrity.

You don’t come here simply because there’s no sugar. You come for the taste.

An address that embodies the spirit of the Haut-Marais

Located on rue Charlot, just moments from the Carreau du Temple and the Marché des Enfants Rouges, Maison Plume feels entirely at home in this creative and exacting neighbourhood. The tea room, designed by Tara herself, combines a glass partition overlooking the laboratory, carefully sourced vintage furniture and a warm, welcoming atmosphere. It feels intimate and thoughtful — as though every detail has been considered.

The philosophy extends well beyond the recipes: a strong commitment to reducing food waste, redistributing unsold items, and favouring responsible materials throughout. This coherence resonates with both local residents and curious visitors alike.

At Hôtel FABRIC, proudly Green Key certified since January 2026, we are particularly attentive to businesses that share a genuine eco-responsible ethos.

The perfect pause during your stay at Hôtel FABRIC
