Méert, real Lille waffles in the Marais

World-famous for their elegant, thin and supremely delicious waffles (gaufre in French), the ornate, atmospheric and seemingly ancient new Méert boutique is already something of a legend in Paris. This beautiful chocolaterie-confiserie is where Lille comes to the Marais, with a story that is sweeter every time it’s told. But Méert is not yet ready to deliver all its secrets as its recipes are always carefully guarded, as they have been for over 250 years, in a small notebook worn by time. Today, the old ways of preparing these sumptuous waffles are perpetuated in a timeless tradition, for the gaufre is a part of the French pastry heritage and remains an artisanal treat. Cooked to sheer perfection between two waffle irons and filled with butter, sugar and vanilla from Madagascar, plus chestnuts, pistachios and cherries, or even spéculos for an extra special taste experience.
