There are just so many variations as the seasons come and go, in which each classic French preparation is enhanced and otherwise revealed by Japanese seasonings or the flavours of Southeast Asia. To whet your appetite: carpaccio de Maigre, lemongrass and vinaigrette ginger, tartar of beef, green mango, crème à la truffe et gomasio, cod bock choy shitake, écume de curry vert, pannacotta thai basil, roasted pineapple and mango sorbet.
