Acid Lactic, the 11th arrondissement's new pizza gem

The 11th arrondissement keeps surprising us with its great addresses, and Hôtel FABRIC is the perfect base to explore them. On rue de la Folie-Méricourt, a new restaurant is already turning heads: Acid Lactic, barely open, has immediately established itself among the best pizzerias in Paris.

A project born from fermentation

Acid Lactic is the result of an unexpected pairing. Valentin Orgeas, already known for Fermentation Générale just steps from Hôtel FABRIC, has teamed up with organic market gardener Cyrille Renault, communications duo David Bellion and Johan Delpuech, and pizzaiolo Dammi Welianga, formerly of restaurant Vantre. Together, they've transformed a neighbourhood pizzeria into a pared-back hangout, with a counter and pine plywood from the Landes.

A dough that changes everything

Here, the pizza deliberately breaks away from the Neapolitan mould. Made entirely with natural sourdough and ancient wheat, the dough has a dense bite that gives it real character. On a short, handwritten menu, the standout is a generously spiced 'nduja, balanced by lactic mozzarella from Nanina, just a few streets away. On the vegetable side, the VG#3 brings together oyster mushrooms, kale pesto, zaatar and smoked ricotta on a carrot purée base, a combination as creative as it is unexpected.

To drink: naturally inclined

The drinks list carries on the house's fermentation spirit: homemade fermented lychee koso, kombuchas, and a selection of 100% natural wines, all at prices that stay reasonable for the area.
