After a first career in finance, Félix Perrotte turned to the restaurant industry to fully pursue his passion for gastronomy. Meanwhile, Ryuji Sato, originally from Japan and the son of a chef, chose to refine his craft in France, working in prestigious Parisian kitchens such as Le Violon d'Ingres and Nomicos.
