A Committed Approach to Cuisine

At the helm of the kitchen, Chef Marie Pacotte creates seasonal dishes using carefully selected ingredients. Trawled fish and endangered species are strictly excluded from the menu. All meats come exclusively from French farms, and a large portion of the fruits and vegetables are grown with respect for the environment. The restaurant also partners with Atypique, an initiative that gives a second life to organic products rejected by traditional distribution channels. It's a thoughtful approach that combines responsibility with pleasure.

Francette was recently awarded its second Écotable seal—a label dedicated to sustainable dining. This level of distinction honors concrete actions in waste management, carbon footprint reduction, local sourcing, and working conditions.
