Wood-fired restaurants around Hotel Fabric: 3 places to try

When the temperature drops, the neighbourhood has its own way of warming up: fire. Texan smokehouse, Thai braziers, Mediterranean robata, bistro hearth… Around Hôtel Fabric, between Oberkampf, Bastille and the Marais, three wood-fired restaurants have made live embers their signature. Melt Oberkampf: the Texan smokehouse on rue de la Folie-Méricourt
It is the hotel's closest neighbour: Melt sits at number 74 of our street, rue de la Folie-Méricourt. The star here is a huge oak-fuelled smoker, where meats cook slowly, from a few hours to around fifteen depending on the cut. On the menu: Black Angus beef brisket, pork ribs, pulled pork shoulder, beef cheek and chicken wings. The recipe comes from Texas, as does the pitmaster behind the restaurant.
Good to know: the meats are smoked on site every day, so quantities are limited. It is best not to arrive too late. Ideal for an evening with friends, made for sharing.

Faaï: Thai-style embers, on the Bastille side
Faaï means "fire" in Thai, and the name says it all. Opened this spring by chef Anne Coppin (already behind the Naam restaurants in Lille and Belleville), this restaurant serves contemporary Thai cuisine built around live embers. Dishes pass over small terracotta braziers brought back from Bangkok, which add a smoky, grilled note to marinades, vegetables and spices. An open kitchen, raw materials, natural wines and craft beers complete the picture.

Robert & Louise: côte de bœuf cooked at the hearth, in the neighbouring Marais
We step out of the 11th arrondissement for a moment, but the Haut-Marais is very close. Robert & Louise, open since 1958, is a bistro with real character: exposed beams, checked tablecloths and, above all, a fireplace where meat is grilled directly over the flames. The dish to order is the côte de bœuf for sharing. Lively atmosphere, tables close together, generous, no-fuss cooking.
Good to know: the restaurant is very popular, so book well in advance.
